Super Simple (Healthy) Salsa

Since summer is winding down (I realize it's fall but I don't want to let go of summer quite yet) I decided to share one of my super simple recipes for salsa (or pico de gallo, whatever you want to call it). Bonus, it's healthy!

We've still got a few tomatoes so I made up a batch last weekend and I'm hoping to make more this weekend. Crossing my fingers for more tomatoes.

Anyhow....gather your ingredients. 

Ingredients

Tomatoes (duh)
Cilantro
Lemon (lemon juice works fine too)
Onion
Garlic Powder
Sea salt (prefer the sea but regular works)
Pepper

(If you want to get crazy you can add a jalapeno, but I'm not a fan so I leave it out.)


Hello gorgeous.

Dice your onion. I use about a quarter of a medium sized onion.

Dice your tomato. Two big or 3-4 small-ish ones.

Throw your tomato and onion into a bowl. 
Dice up your cilantro. About a tablespoon.

Add to tomatos and onions.

Squeeze lemon juice onto the mixture.
(Add jalapeno hear if you want.)

Add about a tsp of garlic powder.
I use powder instead of salt so we don't get too much sodium.

Generously add pepper if your husband is a pepper lover like mine.
Plus a pinch of salt or so (you can always add more later). 

Mix it up.

Admire how beautiful and summery it looks.

Next, put it in the fridge for about an hour so the flavors can mingle. 

Most important step right here....taste it! Does it need anything else?
Add it in and stir it up. 

Eat with chips or on a taco salad or off the spoon.
There's really no wrong way to eat this stuff.
(We like to call nachos a taco salad in our house. Sounds healthier!)

That's all there is to it! See, told ya it was easy. 
Now hurry and make some before all the tomatoes are gone.

7 Quick Takes {17} - Fall decor, Nascar, and other ramblings

Linking up with Jen at Conversion Diary. Check it out. 

1. How do my weekends end up so jam packed? Somehow I'm supposed to fit in my high schools homecoming game, an oil change, the Octoberfest type event in my hometown, go with Seth to help out at my parents house, maybe visit a blog friend in real life at First Fridays and then Sunday we have tickets to a Nascar race. Which brings me to my next point...

2. What does one wear to a Nascar race? I've never been and let's just say I don't want to stand out, but I'm pretty sure I don't want to look like everyone else. Especially if it's anything like how my brain has imagined it to be (read mullets and beer belly's). Seth insists this is something I need to do at least once in my life and since we got free tickets how can I say no? Wish me luck?!

3. There has been some amazingness floating around the interwebz this week and I love it. Try this or this. If you're not having a better day after those two videos you might need to visit a doctor cause you probably need meds. 

4. Finally got some spaghetti sauce canned this week before the tomatoes rotted all over my counters. Yay me. Maybe I'll get around to posting some deets next week. 



5. On my quest to be healthier I have been continuing with my pop only once a week rule. I've actually decided to make it two though, (I know, I have no self control) but here me out. I have one pop every Sunday. It's the sugar loaded caffeine fix I look forward to all week but sometimes you just need a second one. Ya know? For example, you're at the movies and you really need a big gulp to go with that popcorn or you're having a slice of pizza which goes great with Pepsi. So, I've decided I get the one extra that I can have anytime I want throughout the week. Then I still get to look forward to my one on Sunday and don't fall off the wagon if I "cheat" and have that one extra. Make sense? It might be pathetic how much I have thought this through, but so far it's working so don't knock it til ya try it! 

6. I've been putting up some fall decor this week. Isn't it cute?




7. Slowly but surely I've been chipping away at my to-do list this week which makes me happy happy happy. I think I deserve a vacation. To bad I don't get paid to accomplish my to-do list because then I could for sure afford one. I guess I will just have to settle for a weekend.

7 Quick Takes {16}

Linking up with Conversion Diary. 

1. I bought my first blogging ebook this week, How to Blog for Profit (Without selling your soul) by Ruth Soukup. (Ruth blogs over at Living Well Spending Less.) I've read a little over half of it and have highlighted a bunch of information I hope to go back and use on my blog sooner rather than later. Hopefully by next week I'll be making millions from this little blogging space. Kidding!

(Ruth, if you read this, know that I really am going to take some of your advice:)

2. Pretty sure I'm the only person who still hasn't downloaded the ios7 update. I've heard it's pretty nifty though so I should probably get on that asap. Any one want to share how they feel about it? Love it? Hate it?

3. The parentals house is getting super close to being finished! Thank goodness because I think they have both had enough of the whole building process. They finally got their cabinets in this week and now it's just the flooring, countertops and touch up painting type stuff.

After watching them stress, Seth said we're never building a house because I'm too indecisive, and he's right, but I still really want to at some point. We'll see who wins that one. 

4. It's almost been a whole month that Seth and I have been living together and we don't hate each other. Yay, go us! I will say upgrading to a king size bed definitely wouldn't hurt the relationship though. Queen beds are kinda a joke. #iwantakingbed

5. I'm really in the mood to go Christmas shopping and get a few presents scratched off of my non-existent lists. I love love love shopping for other people but when I do it all in a one month time period it really kills the ole budget. Thinking I need to start my lists now so I can start shopping next month which is only a few days away. Do people do this? Does it help you stick to a budget or do you end up buying more because you shop now AND later? That's what I'm a little worried about. 

6. Day 5 of not drinking pop and I haven't died yet. I tried this a little while back and was doing okay until I went on vacation and fell off the wagon harder than an alcoholic at a beer convention. As of right now, so far so good. My goal is to drink only one a week and the rest of the time stick to water or tea (not sweet cause that's disgusting). If you want to encourage this good habit it will be greatly appreciated because sometimes I just want to throw a tantrum and have a Pepsi, ya know?! Plus I wouldn't mind dropping 10 15 pounds. Just saying.



7. Since it was Seth's birthday yesterday we had a little birthday dinner at home last night. Grilled BBQ chicken with over the top unhealthy twice baked poh-taw-tohs and fresh garden tow-mah-toes. Seth grilled the chicken while I sliced the toms and tried to kill us with fat in the potatoes. Maybe I should post the non-recipe here sometime....anybody feel like having a heart attack?

Act like you don't want to lick those potatoes right off your screen!
Gosh I just read this and it's a little d-d-dull. Do you wanna slap me for wasting your time? Maybe I'll ride a unicorn through a waterfall or something this weekend so I can bring you a little more excitement next week.

Have I put on weight??

I'd say I had a semi-average weekend. What else is new?

After work Friday I stopped by to check out the progress on my parents new house and got suckered into helping carry tile. Ugh, that stuff is heavy. I managed to leave in time to stop at the local farmers market to check out the goods people had on display. Since I can't carry cash with me, or I spend it, I only had a measly dollar in my pocket which I used to splurge on some homemade dog treats for Gunnar. Spoiled much? 

Since I have my very own jungle garden I just went home and picked my own produce. Good thing or I'd be in the poor house. I've got my own tomatoes that cost way less than $2.50 a lb. Is that really the going rate?? If so, I easily picked 25 bucks of tomatoes from my garden Friday night. 

Obviously I sliced those puppies (tomatoes, not real puppies) up and fried some bacon to make myself a lovely bacon tomato sandwich (or 2). Best summer meal ever. I know most people add lettuce to make this a bLt but who are we kidding people? Do you really think that one measly slice of lettuce is making this meal healthy? I assure you it's not. Just replace the lettuce with another slice of bacon and be thankful that you are enjoying those savory bites of fried pork before your heart explodes.

Then I sorted my coupons and made my shopping list for my price match extravaganza the next day. Maybe watched a little DVR because I'm cool and can do that now.

Saturday I spent an unnecessary amount of time price matching groceries at Wal-Mart. Apparently every effin person in the little ole town of Lawrence, KS (aka Jayhawk territory) was back to school shopping. A living nightmare. Literally. I managed to grab the items on my list and make it out in right under two hours. Not sure if I would consider that a win or a lose. Fortunately Target housed a little more sanity as I swung in to pick up a few un-neccessary (shirts) items.

I ventured back to my parents house in the afternoon to play with a cute baby, my parents watch, when his parents are on call. My mom and I went to church and then I gotta to spend more time playing with the other baby, that my mom nanny's for. The little girl is just precious and she let me hold her so I was pretty excited. Baby fever? Maybe. 

Apparently someone else must think I have baby fever too, or possibly just thinks I've put on a few lbs, cause these dang magazines all showed up to my house last week....

Sunday was pretty lackadaisical with another meal of blts while meeting with my church's other youth group leaders. Followed by lots of couch lounging and maybe a nap. I finished off the evening by doing a photoshoot for a high school senior and catching up on my favorite mind numbing (dumbing??) shows.

Oh, and I found $20 in a parking lot so that pretty much makes the whole weekend a win right?

Gardening 2013

It's garden season folks! Finally, I might add. 

After what I like to refer to as "the longest winter known to man" it's time to enjoy those beautiful spring days.

Last Tuesday I was able to get my garden planted after a couple days without rain. I've got a feeling I may have timed my planting perfectly again this year. Want to know why?

This is why...


...everything is sprouting!! 

Literally, everything I planted is popping through the dirt. The photos are from planting last week and when I checked it all out last night. Only 6 days after putting it in the ground! In case you can't tell I'm totally fascinated and amazed that this can happen in under a week. I'm also super excited for the produce to come.

The corn sprouting last night! May 20th.

Strawberries that were planted last year and will produce this year. You need to pick the blooms off the first year so that they will grow and produce a lot the second year. May 20th.

The onions have more than doubled in size since last week.  May 20th.

These are the same ones Gunnar was sitting next to in the photo above. May 20th. 

Please ignore the weeds, it's been to wet the last couple days to weed and they sort of multiply when they get rain. 

There is lots of other stuff I have planted but haven't posted photos of yet. Including 10 tomato plants, 2 pepper plants, a jalepeno plant and a serrano pepper plant, lettuce, spinach, zucchini, squash, and pumpkins. Plus a few herbs like cilantro which is great for salsa. 

My husband loves spicy and so I hope to be making him lots of spicy salsa, with all those peppers, later on this summer. 

If you have any gardening questions feel free to let me know. This is only my second year with my "own" garden but my mom has had one my whole life. I have/had grandparents with Green Thumbs on both sides of the family so I'm hoping I got lucky and got the thumb and not just beginners luck last year.

Gardening: Seeds coming up

Well, I got everything planted and was super excited to see some of the seeds popping up!

Here is the lettuce that I planted as seeds. It's just peeking through and I must say I was pleasantly surprised that it made it that far:)


You can see a little broader view of the garden here with the lettuce and tomato plants as well as the strawberries in the row on the right.


This is the radishes popping up. Check out the stripes on that lawn!! 
 


 These are how tiny the tomato plants were when I bought them from Home Depot. I felt ridiculous leaving several feet of empty space in between each of the plants. Lets say it's a good thing I left the space...

Gardening: In the beginning

With Daylight Savings time starting this past weekend I have been starting to get excited for Spring!

I'm beyond sick of the cold and snowy weather we have had here in Kansas this winter. I would move someplace warm in a second if I could talk my whole family and husband into it. Unfortunately, that would require A LOT of people moving and my husband loves the snow and cold (aka: hunting season) so it doesn't look like I'll be moving anytime soon. 

Thank goodness Spring is right around the corner though. With Spring comes the planting of my garden which I'm super excited about. 

Last year was my first Spring and Summer, as a wife, in our new home, which meant a new garden. 

My mom had a garden my whole life growing up and I helped with it some but the older I got the less I helped. 

I decided it would be fun to have my own garden and decided to jump right into this little venture of planting one. Honestly, I've had plants in the past and promptly killed them because I forgot to water so I wasn't overly optimistic when starting out. 

I think my husband was also a little bit hesitant to till up "his" yard because let's just say he LOVES his yard. We had no proof that I would be able to garden and he really didn't want to till up a good hunk of his beautiful-perfectly-manicured-mower-striped lawn if my gardening skills were lacking. 
In case you are wondering just how much he loves the yard I will tell you it's the background photo on his phone, not me, not our puppy, "his" yard. ha. 

Anyway's, I finally talked him into tilling me up a small but still decent sized area to give my gardening skills a chance. The photos were taken on April 8th of last year (2012). 


This is my garden after my father-in-law disced up the yard.

Doesn't look very promising, huh? Check out that green lawn though!

Seth then helped me till up the disced area to make the garden a little more rectangular and have straighter edges. 

Now it was up to me to plant, water, and grow all those plants.

Top 10 Tuesday: Garden Plants



Below you will find 10 of the plants that I cannot wait to plant and have fresh produce from. Most of these plants are the same as what I planted last year but I love them so much I will plant them again this year. 

1.Tomatoes - My very favorite item from the garden! I like to plant the big slicer tomatoes as well as some cherry tomatoes for salads and such. I'm hoping to find the kind my mom planted last year that are smaller than a Roma but bigger than a Grape tomato. They were awesome.





2. Strawberries - When you plant strawberries it usually takes a year before they produce and since I planted last year I'm hoping to have them this year. I love to make freezer jam with strawberries. 

3. Corn - Does anything say summer more than a nice ear of corn on the cob? I didn't think so.

4. Potatoes - Digging up potatoes is like hunting for buried treasure. It's so exciting when you pull them out of the ground and then they keep for such a long time in a cool dry place. 

5. Onions - I love onions. On salads, sandwiches, in potatoes, on kabobs...pretty much anywhere really.

6. Lettuce - Making a salad with fresh lettuce from your own garden is strangely satisfying. Make sure you wash it good to get the dirt off and then throw it in salad spinner to dry off. Yum!

7. Peppers - These are so great to dice up and throw on fresh salads or with the onions on some kabobs. My favorite are probably the red peppers while my husband loves the green.

8. Green Beans - For some reason I forgot to plant these last year and I was super disappointed. Hoping to plant a bunch and then can them for the winter.

9. Cucumbers - My cucumbers last year turned out pretty bad. I think I got a bad variety (that's my excuse anyway). This year I want to try planting some pickling cucumbers and then make homemade pickles. Seth and I both really like pickles so why not.

10. Jalapenos - This goes in my garden for Seth mainly. He loves things hot and spicy and jalapenos are just that. I used a ton of them in the salsa I canned last year but I'm hoping to put in two plants this year so I can can (haha) some as well. 

The plants listed above are just some of what I will be planting. Do you have favorites to plant in your garden?

I hope the weather cooperates so I can get everything in on time this year and have an abundant harvest like last year.
